I started writing this post yesterday but my brain wasn't working and my fingers weren't typing, so I quit. Now I'm sitting in front of the computer and my choices are to finish this post or do my workout. Naturally I chose to remain seated, so here I am....blogging. We just got back from a week off in Gatlinburg, TN with Eric's family on vacation and came home to a weekend with my sister and her husband, two people who make me laugh more than what is probably healthy for one weekend.

Lemon Cornmeal Cakes

We prefer desserts that serve two, so we don't have leftovers. These cakes were inspired by this Bon Appetit recipe. We went heavier on the cornmeal and lemon and skipped the berry topping they suggested among other changes.

Lemon Cornmeal Cake

For Glaze

  • 1/4 cup powdered sugar
  • 3/4 tsp lemon juice
  • 3/4 tsp limoncello

Combine powdered sugar, lemon juice and limoncello in a small bowl.

Seared cauliflower, broccoli and burrata pasta

There is something gloriously comforting about the triad of broccoli, cauliflower, and some sort of cheese. Originally I wasn't going to bother posting this because I feel like any pasta dish with vegetables and cheese is almost too obvious, simple, and easy but hey - this is the sort of thing that you generally yearn for at the end of a long day.

I sat here watching Food Forward on PBS.  It's a show about the dreaded economy and how inner city people are moving ahead by re-creating the economy in their own ways.  One of them was a farm created from an empty warehouse.  A fish lover decided to invest in an aquatic system not to grow goldfish or arowanas but to grow fresh tilapia.
